Chicken thighs are soaked in a creamy, well spiced, yogurt based marinade and then cooked on the grill to get that traditional char. These grilled chicken thighs are moist, luscious, and delicious: they're marinated in yogurt with just the right blend of spices. Place chicken in a large resealable plastic bag. Pour yogurt mixture over chicken, press air out of bag, and seal.

- Mix all the ingredients of the marinade together and blend well..
- Make small slits in the chicken so as the marinade gets inside properly. Now mix the marinade with the chicken. Make sure the consistency of marinade is thick. That is, dont add loose curd. Blend the chicken well with marinade and keep aside for 1-2 hours.
- For green chutney, put all the ingredients with only 2 tbsp curd in the mixture and grind well to make a paste. After this add the rest of the curd and whip once. Green chutney is ready..
- For chilli mayo, blend all the ingredients without oil in the mixture. After blending well, add 1/4 cup oil first and blend well, again add the rest of the oil and blend well. If you want more thick consistency, you can add more oil and blend. Note that result is best with sunflower oil..
- Now for cooking the chicken in grill, make the grill ready with burning charcoals. Add the chicken to the grill and check if both sides get cooked well. Do not cook while there is flame..
- After cooking it completely on both sides, you can move aside and garnish with coriander leaves and lime..
- You can try this in pan too. (Without grill). Place this chicken in pan after adding jst 1 tbsp oil. Cook till it's done on both sides in medium flame. Then at last place a piece of burning charcoal in a plate, inside the pan, add some ghee to the charcoal, then close the lid for 5 minutes. This is to get the smoky flavour..
